Fresh Tomatoes (from the yard), Strawberries, Peaches, Mozzarella Cheese, on a bed of Lettuce, sprinkled with shredded Carrots and Purple Cabbage. 

Any available fresh fruits and vegetables could be used to create a colorful spread. I didn't use any salad dressing, but did give some peanut sauce for dipping.
