Homemade Apricot Jam
I love summer time because of the variety of fresh fruits and vegetables that the gardens produce! These apricots came from a friend's yard. Personally, I am not a fan of apricots, but the jam turned out great - sweet and tangy with a lovely caramel orange color!

- Clean up fruits, remove the pits and quarter.
- In a large pan, mix 6 cups fruit, 3 cups sugar, juice and zest of 1 lemon from neighbors yard.
- Bring to boil and simmer on medium for about 30-40 mins.
- Done! Pour into clean jars and store in the refrigerator after it has cooled.
