Spinach Adai (Pancake) Made With Lentils & Barley
Adai is a Southern Indian style of savory pancake made with a mix of several types of lentils and rice. Today I replaced rice with barley and added chopped fresh baby spinach to the batter. It tasted yummy with a peanut, mint and yogurt chutney on the side.
This makes a nutritious meal choice for any time of the day!
